A Weekend of Sun and Jam

Strawberry jam that is! On Sunday we made way too much strawberry freezer jam that my dad had to take home 90% of our share because we just don't have room in our freezer. I have this recipe down to a tee by memory since we made TWO flats of strawberries worth.

Caution! If you are a health nut the sugar content in this will make you not want to read past this sentence  :) But what kind of freezer jam would it be without SUGAR?!


Here's the simple recipe:

Yields: 4 1/2 Cups Strawberry Freezer Jam

Ingredients:
2 CUPS Smashed Strawberries
4 CUPS Granulated Sugar
One Pouch Certo Sure-Jell Fruit Pectin (Box comes with two pouches)
2 Tablespoons fresh squeezed lemon juice
Three 1 1/2 Cup Freezable Plastic Containers


2 Cups Smashed Strawberries, leaving some chunks (oh lets say its roughly 4 Cups whole berries?)

In medium bowl mix 2 CUPS smashed berries with 4 Cups Sugar, let sit for 10 minutes stirring occasionally (yes that's a lot of sugar)
In small bowl mix together one pouch Certo Sure-Jell Fruit Pectin and 2 Tablespoons fresh lemon juice
After fruit and sugar have sat for 10 minutes add Fruit Pectin mix, let sit for 3 1/2 minutes stirring occasionally
Pour into three 1 1/2 Cup Freezer proof plastic containers, don't forget to "burp" the air out of the containers!

Let jam sit at room temperature for 24 hours
Freeze jam or put in fridge for use.
ENJOY!!!

Oh, all the while hubby is making some fresh squeezed lemon water with strawberries. He left something behind...can you spot it? He meant well!
